Renaissance Ballrooms almost ruined my wedding!

I recently got married and hosted my reception at Renaissance Ballrooms in Miami, FL. When I first signed the contract and started getting the details under way everything seemed fine. But as the date got closer and things needed to be finalized i saw the ugly truth about the owner (Rose). She wasn't there to help her customers or to ensure that the service was top quality, all she cared about was making money. I'm sorry, but if I pay for something I want the best service because that is supposedly what I am paying for. Well, first, at my bridal shower I had an unexpected guest so my father went and asked for an extra plate saying that he could give them a check or pay with card because he didn't have cash. The lady he spoke to was rude and she yelled at him saying that it wasn't her fault that there was an extra guest and that she needed cash. She would not give us an extra plate unless we had cash when in their office, they have a credit card machine. Then, when we spoke to Rose, the owner, she said "I'm glad they did that to you. It's my rule and I expect them to follow it." We tried to reason with her but she didn't even explain why she would accept cash and not a check or a card. Then, we wanted wine to be served at the wedding, but what they were charging was ridiculously expensive so she allowed us to bring our own wine. A couple days before the wedding we brought in the wine. Everything was completely paid off and all told us to do was drop off the wine with an uncorking fee. The day we sat down with us, she gave us a price for the uncorking fee and we did the math right there with her to see what the total would be for the number of bottles we were bringing. She gave us a price and did not mention anything about extra taxes. When we dropped off the wine, she added taxes to the amount and charged us something different. It was a mess and my brother-in-law was the one paying for the wine. I felt so bad because I told him how much it would cost and when he went with us to pay he didn't have enough and my mother-in-law ended up paying the difference. What really got me mad that day was how Rose screamed at us and argued with us, telling us that it's common sense that taxes would be added to that price. I don't own a ballroom and I had paid everything that was on my contract including taxes. How was I to know that she was also going to charge us taxes on the uncorking fee when she didn't say so. I was going by her word and she had even written on a piece paper how much she was going to charge me for the wine, which did not include taxes. Well, that wasn't all. I my menu included beef and I had a family member and a friend who don't eat beef so I specifically ordered chicken for them. They told me that it was fine. After the wedding I found out that no one ate chicken after my wedding coordinator had specified that chicken was supposed to be served to these two people. On top of all this the ballroom itself was large enough for my guest list but because of the way the tables were set up, everyone was crammed together and there was a huge space on one side of the ballroom where the tables could have been accommodated better.
