I bought the 32 piece Freedom cookware in 2011. A friend of mine at the time who is a chef explained to me that to use stainless steel / aluminum cookware, you need to change your cooking habits. First, you heat up the pan, slowly, never use high heat. Next, test the pan with a small drop of water and if it sizzles, it is ready. Next, add some cooking oil (I use olive oil). Allow it to get hot before adding the food. Once your food is finished, add water to the pan so that the food does not stick. Also, he said to always have on-hand a cast iron skillet and a non-stick pan for cooking. Stainless steel and aluminum cookware is not recommended for every type of food. I also own a non-stick copper pan. This is a great cookware set, but you need to learn how to use them properly.
